Lightening Bolt Eggplant

Ingredients
  • Olive oil spray
  • 1 large eggplant, peeled and chopped into 1-inch chunks
  • 1 quart no-salt-added chicken broth
  • 1 red pepper, chopped
  • ½ cup chopped green onions
  • ½ cup chopped fresh parsley
  • Juice of ½ lime
  • 1 tablespoon Fat Flush Curry Seasoning
Instructions
  1. Preheat oven to 425° F.
  2. Spritz a baking sheet with olive oil spray.
  3. Spread eggplant cubes on baking sheet and roast for about 15 minutes or until softened and browned, turning occasionally.
  4. Add eggplant and remaining ingredients to a 2-quart pot.
  5. Bring to a boil and let simmer, uncovered, for 5 minutes or until peppers and onions are soft.
