Fiery Grilled Shrimp Salad

  • 1¼ pounds medium shrimp, prepared using the Fiery Shrimp Skewers recipe
  • 8 cups mixed greens or spinach, thoroughly rinsed
  • 1 cup grape tomatoes, sliced
  • 1 cup fresh mushroom, sliced
  • ½ red onion, thinly sliced
  • ½ cucumber, sliced
  1. Toss all ingredients together in a large bowl and serve with the Herbal Dijon Vinaigrette.

Use the Fiery Shrimp Skewers recipe and the Herbal Dijon Vinaigrette recipe!
