Baked Salmon and Tomatoes

Ingredients
  • 4 (5-ounce) salmon fillets
  • Olive oil spray
  • 3 tomatoes, chopped, or 1 (14-ounce) can chopped tomatoes, drained
  • 2 chopped shallots
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 green onions, sliced for garnish
Instructions
  1. Preheat the oven to 400°F.
  2. Stir the tomatoes, shallots, lemon juice, oregano and thyme in a medium bowl to blend.
  3. Spritz salmon with olive oil spray and place, oiled side down, on a sheet of foil.
  4. Wrap the ends of the foil together to make individual salmon packets.
  5. Spoon the tomato mixture over the salmon.
  6. Fold the sides of the foil over the fish and tomato mixture to cover completely, and pinch to seal the packet closed.
  7. Repeat until all packets have been made.
  8. Place packets on a large baking sheet and bake until the salmon is just cooked through, about 25 minutes.
