Spaghetti Squash
Enjoy it as a pasta substitute with meat sauce; in a smoothie; as a snack sprinkled with your favorite savory seasonings; or as a “dessert” when sprinkled with a bit of cinnamon.
Jicama
Cut into sticks and enjoy raw, sprinkled with apple cider vinegar or lime juice; tossed with your favorite savory seasonings; or mixed with fresh herbs.
Cucumber
Sliced and sprinkled with apple cider vinegar, lime juice, or lemon juice; tossed with savory seasonings; or mixed with other sliced veggies (tomatoes, onions, spinach, etc.)
